Tasty & Healthy Greek Beans

Greeks know how to eat and have a good time for sure. In fact, Greek food is one of the healthiest food around, so if you desire to lose a few pounds, stick with some Greek recipes for a while and enjoy low fat, delicious food.
As you prepare this recipe, keep in mind that beans are great source of protein and essential vitamins. This Greek recipe uses all fresh ingredients and extra virgin olive oil which is a healthy oil to cook with. Enjoy this side dish for lunch or as an addition to a great dinner.

Ingredients

2 cups dried beans (of your choice)
2 TBSP Extra virgin olive oil
3 Small Onions, chopped finely
2 Tomatoes, chopped

2 Garlic cloves, minced
1 tsp Thyme
1 tsp oregano
1 tsp parsley
1 tsp tomato puree
1 tsp sugar
Salt to taste
Pepper

Instructions:

1. Wash beans properly and soak in water for one night. Drain and boil for 10 minutes in fresh water on high heat. After 10 minutes lower the heat and allow them to cook for 20-30 minutes. Drain and keep them aside once cooked. Make sure the beans are firm from outside but soft from inside.

2. Chop onions and tomatoes, finely. Crush garlic cloves and chop herbs.

3. Take a saucepan, heat the olive oil. Once oil is hot, add the garlic. After garlic is sautéed, add onions, oregano, and thyme. Cook onions until they are translucent. Now add chopped tomatoes and puree. Cook until tomatoes soften. Once tomatoes are cooked, mesh them and add sugar, salt, and pepper. Mix properly and allow it cook for 30 minutes on medium heat.

4. Preheat the oven to 180.

5. Now add the parsley into the mixture and finally add the boiled beans. Spread the complete mixture on an oven dish, season with little salt, pepper, and cook it for 30 minutes in preheated oven.

6. Serve the dish hot.
